<br />
PROCEDIMENTO<br />
<br />
Iniziamo con a versare gli albumi e lo zucchero in una ciotola ben pulita e resistente al calore.<br />
Mettiamo la ciotola in una pentola a bagnomaria .Lavoriamo gli albumi e lo zucchero perché non "impazzisca" finché arriva alla temperatura di 65 ° gradi .<br />
Togliete la ciotola dal bagnomaria e lavorate il composto con il mixer finché non si gonfierà e si sarà raffreddato<br />
Ora iniziate a mettere il burro molto lentamente .Se il composto diventerà un può "impazzito" al inizio niente panico si rimedia facilmente<br />
Aggiungete lo zucchero vanigliato e lavorate finché la crema non sarà perfettamente liscia .<br />
Se la crema al burro e troppo fredda ,rimetterla a bagnomaria per pochi secondi e lavoratela di nuovo.Se è troppo calda ,mettetela per pochi minuti in frigo e lavoratela<br />

PROCEDIMENTO</div>

Iniziamo con a fondere il cioccolato e il burro.Mescoliamo i tuorli con una forchetta e aggiungiamo il burro fuso e poi il coccolato,anche un pizzico di sale e la vaniglia.</div>

Montare le chiare e quando sono leggermente spumose uniamo gradualmente lo zucchero,continuare a montare fino ad ottenere un composto lucido e consistente.</div>

Uniamo le chiare al composto prima preparato,prima qualche cucchiaio di meringa per ammorbidire il composto,poi la restante ,mescolando con attenzione dal basso verso l'alto.</div>

Aggiungiamo la farina setacciata sempre delicatamente.</div>
<div class="separator" style="clear: both; text-align: left;">
Versiamo l'impasto su una tortiera da 20 cm( anche24) imburrata e cuocere per circa 40-45 minuti in forno a 180° C(prova stecchino)Si può fare anche con 2 tortiere da 20 cm versando l'impasto in modo uguale,in questo caso si fanno cuocere 30-35 minuti ,comunque facciamo la prova del stecchino.</div>

Incorporate i tuorli delle tre uova uno alla volta sempre mescolando fino a che tutto risulta bene liscio</div>

Lasciate un po a raffreddare prima di unire la créme fraiche e albumi montati </div>

A parte montate i bianchi a neve ferma </div>

Sbattete la créme fraiche con il zucchero fino a che non formerà delle bollicine in superficie</div>

Per la base ho fatto una torta all'arancia<br />
Ingredienti:<br />
400gr di farina<br />
300gr di zucchero<br />
300gr di burro<br />
5uova<br />
150ml di succo di arance spremute<br />
100ml di yogurt <br />
scorza d'arancia grattugiata<br />
una bustina di lievito per dolci<br />
sale<br />
Dose per due torte da 22cm<br />
<br />
PROCEDIMENTO<br />
Iniziamo con ammorbidire il burro nella planetaria (finché si schiarisce di colore)<br />
Aggiungiamo lo zucchero e sbattiamo ancora per 5 minuti.<br />
Le uova le aggiungiamo una per volta ,dopodiché montiamo ancora per circa 5 minuti.<br />
Versiamo un po'del succo e qualche cucchiaio di farina,alterniamo questi due ingredienti<br />
Alla fine aggiungiamo il latte ,il sale ,la scorza e lo yogurt<br />
Prepariamo le teglie con carta forno e versiamo l'impasto in modo equo<br />
Inforniamo nel forno preriscaldato a 180°C per circa 30-40 minuti,facciamo la prova del stecchino<br />

Procedimento<br />
In una ciotola misceliamo tutti gli ingredienti solidi .A parte misceliamo tutti gli ingredienti liquidi ,uniamo poco alla volta il composto liquido a quello solido con il robot di cucina a bassa velocita. Preriscaldiamo il forno a 150°C,imburriamo e infariniamo la tortiera .aggiungiamo il composto ben omogeneo e inforniamo per circa 35 minuti .Meglio che inseriamo nel centro della torta uno stecchino, deve uscire perfettamente asciutto e pulito<br />
Togliamo dal forno e lasciamo raffreddare per 10-15 minuti poi stacchiamo con un coltello a lama piatta gli bordi ,rovesciamo la torta e lasciamo raffreddare completamente.<br />

PROCEDIMENTO<br />
Iniziamo con far sciogliere insieme il cioccolato e il burro<br />
Mescoliamo le uova con zucchero e vanillina in una ciotola posta a bagnomaria. montiamo questo composto finché si raddoppia di volume e diventa consistente<br />
Aggiungiamo il cioccolato fuso<br />
Setacciamo insieme la farina,il sale e il lievito(consiglio almeno per 3 volte) e iniziamo a incorporare gradatamente (meglio un terzo alla volta) la farina al cioccolato e mescoliamo .Dopodiché aggiungiamo la panna acida.<br />
Versiamo il composto nello stampo già imburrato e foderato e cuociamo per 55 minuti in forno preriscaldato a 160°C.Il dolce è cotto quando se infila uno stecchino e ne esce senza tracce di pasta.<br />

Per preparare la crema<br />
Tostiamo leggermente le noci in forno per 10 minuti e le sminuziamo grossolanamente<br />
Il cioccolato spezzettato lo mettiamo in un recipiente <br />
Portiamo a ebollizione la panna e la versiamo sopra il cioccolato .lasciamo per qualche minuto dopodiché mescoliamo per bene il tutto .aggiungiamo il burro .Aggiungiamo le noci solo al interno dei strati.<br />

Per la crema:<br />
Iniziamo a montare gli albumi finché risultano gonfi<br />
In una pentola mettiamo lo zucchero ,il cremor tartaro,200ml di spremuta d'arancia e un pizzico di sale,portiamo a ebollizione per 4-5 minuti fino a ottenere un sciroppo denso (portiamo il sciroppo alla temperatura di 106-110 °)<br />
Continuiamo a montare gli albumi versando a filo lo sciroppo.per circa 7 minuti a forte velocità e montiamo tutto .<br />

Procedimento<br />
Iniziamo con a lavorare il burro insieme con il zucchero finché diventa una crema.Incorporiamo i tuorli di uova uno alla volta<br />
Mescoliamo la farina con il sale e biscotti sbriciolati .Incorporiamo gradualmente al composto di burro,alternando il latte e il cioccolato ridotto in granella.<br />
Montiamo a neve gli albumi e aggiungiamo al composto di prima lavorando dal basso verso l'alto<br />
Versiamo il composto nello stampo scelto e cuociamo per 40-45 minuti alla temperatura di 180° C ,provare la cottura con uno stecchino <br />

PROCEDIMENTO<br />
Prepariamo la base iniziando con a tritare finemente i biscotti, aggiungiamo il burro fuso e mescoliamo bene.Con il retro del cucchiaio premere con decisione la miscela ottenuta sul fondo di uno stampo con cerniera in modo uniforme .Mettiamo il stampo in frigo e in fra tempo prepariamo il ripieno.<br />

Nota: io ho messo sul fondo del stampo un cerchio di carta da forno.<br />
<br />
Nota :per latticello io ho messo 100ml di latte e 150ml di yogurt e un cucchiaio di succo di limone. lasciamo riposare per almeno 30' dopodiché aggiungo il colorante in polvere.<br />
<br />
Crema di formaggio insieme con lo zucchero li mescoliamo con l'aiuto di un sbattitore elettrico a una velocità media per un minuto.aggiungiamo le uova una per volta e gli ingredienti restanti mescolando sempre fino che sonno combinati per bene. Versiamo nello stampo con la base dei biscotti.<br />
Prepariamo una teglia abbastanza grande per poter aggiungere sopra il stampo con il nostro preparato ,lo riempiamo con l'acqua per poter fare cuocere a bagnomaria.<br />
Preriscaldate il forno a 180°C.Mettiamo 2 fogli di pellicola di alluminio una sopra l'altra e appoggiamo sopra il nostro stampo con cerniera e avvolgiamo la pellicola anche sui lati fino al bordo della torta.Posizioniamo lo stampo con il foglio protetto in teglia a bagnomaria .In forno a 180°C per 10 minuti poi abbassiamo a 160°C per altri 40 minuti (fai la prova con il stecchino)<br />
Togliere dal forno il cheesecake .Rimuovi con cautela dal bagnomaria .Lasciare intiepidire per 15 minuti e passa con un coltello sottile intorno ai bordi della torta di formaggio.Raffreddare completamente (per almeno 8 ore o tutta la notte) e rimuovere i lati della teglia.<br />
<br />
Prepariamo la glassa : sbattere la panna da montare e lo zucchero con la frusta elettrica e vanillina finché diventa come una neve .Guarnire a piacere.<br />

Questa torta venne creata alla fine del secolo XIX da Josef C. Dobos,un grande cuoco di Budapest e proprietario di un negozio di specialità.<br />
Nel 1885 si presentò alla prima Esposizione nazionale a Budapest , i suoi dolci riscossero un successo fenomenale.<br />

Per l'ilmpasto iniziamo a lavorare i tuorli con la meta dello zucchero finché prende volume ,aggiungiamo il succo di limone e 2 cucchiai di acqua. In un altra ciotola montiamo a neve gli albumi con il zucchero rimanente .Uniamo all'impasto di tuorli e zucchero farina ,scorza di limone e gli albumi a neve .</div>

Cuociamo nel forno preriscaldato a 180°C 6 basi di torta dello stesso spessore per 10 minuti .sono pronti quando il bordo comincia a dorarsi .Meglio questa operazione si fa cuocendo 2 basi per volta .</div>

Togliete subito le basi dalla teglia,usando un coltello e lasciatele a riposare su una gratella.</div>

Per preparare la crema iniziamo a far cuocere lo zucchero in 50 ml di acqua finché ottenette un sciroppo e poi lasciate raffreddare .Unite il burro il cacao e il cioccolato ammorbidito .verso fine aggiungete il rum .</div>

In un tegamino sciogliete lo zucchero con il succo di limone e fatelo caramellare rimestandolo di continuo .Versatelo sulla base della torta che avete tenuto da parte il caramello e lisciatelo subito con un coltello,precedentamente imburrato.Dopodiché tagliate la base in 16 fette di uguale grandezza .</div>

Componete la torta .stendiamo un quinto della crema sul primo strato di torta ,copriamolo con il secondo strato e proseguite cosi finché non avete sovrapposto i cinque strati di torta .passati la crema anche sui bordi e decorate il bordo con la granella di nocciole oppure mandorle.</div>

90g di farina <br />

4tuorli<br />
110g di zucchero<br />

PROCEDIMENTO<br />
<br />
Iniziamo a separare i tuorli dagli albumi .In una ciotola montiamo 8 tuorli e metà di zucchero con le fruste fino a ottenere un composto denso e spumoso.A parte montiamo gli albumi con lo zucchero rimasto dopodiché iniziamo a incorporare delicatamente ai tuorli per non smontarli.Sopra iniziamo a setacciare i 80g di farina,poca alla volta e amalgamate con una frusta..In fra tempo rivestite una teglia che le dimensioni 30X26 cm con carta da forno,imburratela ,infarinatela e trasferite il composto per il biscuit e pareggiatela con una spatola .<br />
Cuocetelo in forno a 200° per 10 minuti .<br />
Sfornatelo dopodiché capovolgetelo sopra un foglio da carta da forno ,staccate la carta di cottura e arrotolate il biscuit ancora caldo aiutandovi con un telo e lasciate raffreddare.<br />
Srotolare il biscuit e spalmatelo con la crema <br />

CREMA CON ZENZERO CANDITO,NOCI E DATTERI<br />
<br />
Ingredienti:<br />
250g di mascarpone <br />
200ml di panna fresca<br />
50g di zenzero candito<br />
100g di gherigli di noce <br />
6 grossi datteri<br />
sale<br />
PROCEDIMENTO<br />
Iniziamo con a tritare grossolanamente i gherigli di noce,tagliate lo zenzero e i datteri a dadini.<br />
In una ciotola lavoriamo il mascarpone per ammorbidilo .Montiamo bene la panna .<br />
Riunite in una ciotola noci,datteri e zenzero ,amalgamate con delicatezza il mascarpone e la panna .<br />
Lasciamo a raffreddare in frigo.Con l'aiuto di una spatola iniziamo a stendere il composto sull rotolo .<br />

PROCEDIMENTO</div>

Per fare la crema alla fragola iniziamo con a mettere le fragole nella ciotola del mixer e frullate fino a ottenere un composto omogeneo ,quindi filtralo attraverso un colino .Metti da parte la polpa ,raccoglie il cioccolato in una ciotola ,riempi per metà una pentola con l'acqua e porta a ebollizione .Metti la ciotola sopra la pentola e mescola di tanto in tanto finché il cioccolato si scioglie .In un altra ciotola inizia a sbattere il mascarpone ,la purea di fragole ,lo zucchero e il sciroppo con le fruste elettriche fino a ottenere un composto gonfio.Aggiungi la gelatina all'acqua e mescola finché si scioglie .Unisce la gelatina fredda e il cioccolato fuso al composto di mascarpone e sbatti fino a ottenere un composto omogeneo .mettila in frigorifero per almeno 5 ore.</div>

PROCEDIMENTO<br />
Iniziamo con a mescolare i tuorli con lo zucchero aggiungiamo lentamente il latte sempre mescolando ,l'amido di mais ,il succo e la scorza di mandarino e fate addensare la crema sul fuoco finche avrà la consistenza desiderata.Trasferitela in una ciotola dopo aver tolto la scorza di mandarino e raffreddatela mescolando spesso con la frusta .Quando iniziate a spalmare la base della torta con la crema al mandarino cospargetela con il mandarino candito a pezzetti ,dei pistacchi tritati e con le gocce di cioccolato.<br />

PROCEDIMENTO:</div>

Iniziamo per prima a spremere le arance e filtrare il succo ,premendo bene con il dorso di un cucchiaio.</div>

In un pentolino ,mettere la farina setacciata con lo zucchero,aggiungere le uova intere e con una frusta mescolare bene fino ad avere una crema omogenea.Versare nel composto a filo il succo di arance,vaniglia e curcuma ,sempre mescolando.</div>

Mettere sul fornello a fiamma dolce la crema mescolando sempre finché sarà bella densa.Lasciare raffreddare completamente coprendola con la pellicola a contatto</div>
